ELLAS TURTLE SOUP
Probably the most delicious turtle soup comes from the Philadelphia area of Pennsylvania. In by gone years, turtle trappers and turtle grapplers caught hundreds of snapping turtles in the Tinicum swamps just South of Philadelphia. In recent years, not so many turtles are caught there. Some states no longer permit the grappling or trapping of Snapping turtles. The native stock has fallen to an all time low. Today, very little turtle soup is made from turtles. However, follow the recipe and you will have a delicious imitation of the elegance of by gone years.
1 pound meat (In this case, beef) 3 & 1/2 quarts water (14 cups) 6 celery stalks, finely chopped 5 large carrots, finely grated 1 medium onion chopped 1 small can tomato paste 6 whole cloves 2 bay leaves 1 tsp dried thyme 1/2 tsp Worcestershire sauce 3 hard boiled eggs 2 cups sherry wine
Roast beef is best acquired from a deli or sandwich shop. Have them chip the beef with the slicer.
